Fig and Ginger Cocktail

Ingredients

Ginger syrup:

1 part peeled and sliced ginger root
1 part sugar
1 part water

To make two cocktails:

4 oz Ogham Craft Spirits Pot Still Gin
1.5 oz ginger syrup
2 tbsp fig jam
0.5 oz fresh lime juice
4 oz club soda
Ice
Figs and thyme for garnish

Instructions

Combine ginger, sugar, and water in a small saucepan over medium heat. Bring to a boil, then reduce to a simmer for 5-8 minutes until the mixture takes on an amber hue. 

Add ice, gin, ginger syrup, fig jam, and lime juice to a cocktail shaker. Shake very well.

Double strain into a cocktail glass filled with crushed ice and top with club soda. Give your cocktail a quick stir to mix well and garnish with skewered fig and thyme sprig. Enjoy!
