Thyme Infused Honey:
6 Sprigs of Thyme (Approx. 2 teaspoons finely chopped)
¼ cup honey
¼ cup water
To make one cocktail:
1 oz Ogham Craft Spirits Pot Still Gin
2 oz fresh grapefruit juice
0.5 oz thyme infused honey
Sugar for rimming
Thyme for garnish
Add the thyme, honey, and water in a small saucepan. Bring to a simmer over low heat for a few minutes, being careful not to boil. Remove from heat and allow to steep another 15 minutes. Strain through a fine sieve and set aside to cool fully before using.
Pour 1oz gin, 2oz grapefruit juice, and 0.5oz thyme infused honey into a cocktail shaker and fill with ice. Shake a few times and double-strain into your sugar rimmed serving glass. Garnish with fresh thyme, and enjoy!
